Description:

Potassium metabisulfite is a chemical compound that has been used as an antimicrobial agent to inhibit microbial growth in pharmaceutical products. It is also used as a preservative in wine and fruit juice. Potassium metabisulfite reacts with hydrogen fluoride, which produces the highly reactive chemical compound, potassium tetrafluoroborate. This reaction can be catalyzed by palladium-catalyzed coupling. The mechanism of action of potassium metabisulfite is not well understood, but it may involve the formation of a complex between the matrix and the bacteria's cell wall, which prevents the bacteria from absorbing nutrients needed for growth. Potassium metabisulfite has been shown to have low toxicity in animal studies.
