Sodium metabisulfite is a sodium salt that is used in the manufacture of food preservatives and as an antioxidant. It is often used to protect against oxidative damage, such as lipid peroxidation. Sodium metabisulfite has been shown to have strong inhibitory effects on bowel disease by blocking the activity of receptors for proinflammatory mediators. It also inhibits cyclooxygenase-2 (COX-2) activity in vitro and in vivo, which may be due to its ability to bind with nonsteroidal anti-inflammatory drugs (NSAIDs). The toxic effects of sodium metabisulfite are well documented and include gastrointestinal irritation, hemolytic anemia, and kidney damage. This chemical has been shown to inhibit enzyme activities such as phospholipase A2 (PLA2), nitric oxide synthase (NOS), and leukotriene C4 synthase (LTC4S) in pathogenic mechanisms involving inflammation.
