Suc-Ala-Ala-Pro-Ala-pNA is an ethoxylate that has been used as a model system for studying the hydrolysis of ester linkages by serine proteases. This enzyme hydrolyzes sucralose, which is a synthetic sweetener and sugar substitute, at a rate of 2.5 x 10 s−1. Suc-Ala-Ala-Pro-Ala-pNA has been shown to have antiinflammatory properties in animal models. The reaction of this enzyme with sucralose is dependent on the concentration of calcium ions and pH. The rate constant for the reaction was found to be 7 x 10 s−1 at pH 7 with a Ca2+ concentration of 1 mM. The reactive site for this enzyme is located in the amino acid sequence Ala residues, which are present at positions 3, 4, 5, 6, 7 and 8 from the carboxyl terminus.
