10-Undecenal is a fatty acid that can be found in various oils. It has shown to have reactive properties with sodium carbonate and malonic acid, which led to the formation of insoluble polymers with film-forming properties. 10-Undecenal also forms carbonyl groups and aldehyde groups when reacted with other substances. The chemical structure of 10-undecenal contains one chlorine atom in its molecular structure. When exposed to sunlight, it will undergo photodegradation and form an epoxide group. This process can lead to the formation of carcinogenic nitrosamines.
