Fructose-phenylalanine (FPA) is a molecule that has potential use as a nutritional supplement. It is synthesized by combining fructose and phenylalanine, which are both present in food sources such as potatoes. FPA has been demonstrated to have antibacterial properties against the bacteria Escherichia coli. The mechanism of action for these antibacterial properties is not yet known, but it may be due to the hydroxybenzoic acid moiety, which has been shown to inhibit protein synthesis in E. coli cells. FPA has also been shown to have emulsifying properties, which could make it useful in the production of liquid foods.
