Butyl sorbate is a compound that is used as a food additive and has an acidic taste. It is used in the form of its powder, which consists of divalent hydrocarbons (C12-C14) that are liquid at room temperature. Butyl sorbate has a melting point of 49°C, and it is soluble in water. The functional groups of butyl sorbate are carboxylic acid esters. The average particle diameter of butyl sorbate is around 1 μm. It can be used for the production of polyvinyl acetate and polyvinyl alcohol. Butyl sorbate can be heated to temperatures up to 180°C without decomposition or polymerization.
It has an odor similar to oranges or lemons, with a fatty acid content of about 4%.
