2-Acetyl-4-methylthiazole is an ether extract that has shown antitumor and antioxidant properties. It was obtained by refluxing a mixture of 2-acetyl-4-methylthiazole, deionized water, and metal ion in the presence of fatty acid to form an imine nitrogen. The resulting product was then separated from the reaction mixture. The chemical ionization mass spectrometry data show that 2-acetyl-4-methylthiazole has six different oxidation products. These are 4-(2'-hydroxyethyl)phenol, 5-(2'-hydroxyethyl)benzoic acid, 3-(2'-hydroxyethyl)phenol, 5-(2'-hydoxypropyl)benzoic acid, 3-(2'-hydroxypropyl)phenol, and 4-(2'-acetoxyethyl)phenol. Structures of these compounds were determined using nmr spectroscopic data. These structures
