Potassium fumarate is a polycarboxylic acid that is found in the form of a white powder. It has an optimum pH at 4.0 and has been shown to inhibit inflammation. Potassium fumarate has been used in animal health, such as for the treatment of inflammatory diseases, as well as in the production of malonic acid, which is used to make herbicides and fungicides. Potassium fumarate can also be used in organic synthesis and the manufacture of dyes and plastics. The compound contains a hydroxyl group and trimerizes under acidic conditions. It can be used to produce patterning on ceramics or glassware through etching with hydrochloric acid or nitric acid. Potassium fumarate also reacts with carboxylates to form a salt-like structure that is water soluble and often found in detergents.
