Sodium Pyridine-2-carboxylate is a metabolic product of pyridoxal, a vitamin B6 metabolite. It has been shown to chelate with metal ions and to inhibit bacterial growth. Sodium Pyridine-2-carboxylate inhibits the production of ornithine, an amino acid, which is required for bacterial growth. This compound also reacts with ethylene diamine to form a fluorescence resonance energy transfer (FRET) molecule that emits light when excited by a laser at 337 nm. The fluorescence emission spectrum of Sodium Pyridine-2-carboxylate has been shown to be sensitive to the presence of benzoates and picolinic acid, two natural products that are found in some foods.
