Triolein is a basic protein that has been shown to have anticancer properties. Triolein has been found to be more stable than other proteins and lipids. It is composed of glycerol, caprylic acid, and oleic acid. The tri-unsaturated fatty acids in triolein are thought to be important for its anticancer properties. Triolein particles are smaller in size than other lipids and can be used for the study of surface methodology. Studies have shown that triolein enhances the metabolic rate of cells by up to 20% and increases the sephadex G-100 binding capacity by as much as 10%. The optimum pH range for triolein activity is 7.5-8.0, with a ph of 8 being optimal. This lipid also has an effect on hepatic lipase activity, which may lead to reduced cholesterol levels in the blood plasma.
