Invertose is a product that is made of sodium citrate, an antimicrobial peptide and a sugar. Invertose has been shown to be an effective inhibitor of bacterial growth in food products. It was first developed as a solid catalyst for chemical reactions and has also been used to prevent the growth of bacteria in test samples. The reaction mechanism of Invertose involves the release of citric acid when it is exposed to water, which leads to the production of hydrogen ions, thereby lowering the pH level. The lower pH inhibits bacterial growth by inhibiting enzyme activity and preventing glucose from entering cells. The addition of galleria mellonella larvae in this study suggested that Invertose can be toxic to insects at high concentrations, but it does not affect mammalian cells.
