16-O-Methylcafestol is a diterpene that has been identified as an important component of coffee. It is present in the arabica variety, but not in the robusta variety. The presence of 16-O-methylcafestol has been shown to have physiological effects. It can be used as a human serum sample preparation method, where it can be used as a marker for lipid peroxidation and oxidative stress. 16-O-Methylcafestol is also found at high levels in human serum samples from patients with diabetes mellitus. This compound can also be used to measure the effect of caffeic acid and chlorogenic acid on the antioxidant system, where it is found at high levels in chlorogenic acid treated cells.
