Benzenepropanoic acid, b-methyl-, ethyl ester (BME) is an optical, non-chiral compound with an acidic functional group. It has a carboxylic acid group and a methyl group on the same carbon. BME is soluble in methanol and hexanes. This compound is soluble in water to form a solution with pH 5.6 at 25°C. The enolate anion of this molecule undergoes protonation to form the corresponding benzoic acid derivative. The kinetic studies of chemical reactions catalyzed by lipases show that BME is a substrate for these enzymes. Enzymatic activity optimization showed that the addition of hydrophobic groups increased the enzyme's activity towards BME as well as other substrates, such as oleic acid and linoleic acid.
