This structural change in the sugar's backbone imparts a higher degree of water solubility and a lower affinity for proteins. 4-Toluoyl 2,3-di-O-benzyl-4,6 -O -benzylidene -a -D -thiomannopyranoside is used as an artificial sweetener and flavor enhancer in food products.
