Ribaric acid also has the ability to inhibit the growth of bacteria, enzymes and fungi. The structure of ribaric acid is composed of alternating carboxylate groups and hydroxyl groups, which give it its biodegradable properties. It can be used in deionized water due to its high resistance to hydrolysis. One study showed that ribaric acid inhibited the growth of bacteria by disrupting their cell wall synthesis and inhibiting their DNA synthesis by interacting with bacterial DNA gyrase.
