Sodium isonicotinate is a chemical compound that has the molecular formula HOCCH(COONa)2. It can be obtained by reacting sodium carbonate and nicotinic acid in an aqueous solution. The compound is often used as an antioxidant additive.
The kinetic data of this compound are not well known, but the product of its reaction with water molecules has been observed to have a redox potential of -1.92 V. The molecule contains two nitrogen atoms coordinated by four oxygen atoms and one water molecule, which makes it a coordination complex. The isonicotinic group attached to the nitrogen atom also makes it a heterocycle and part of group P2.
Sodium isonicotinate has inhibitory effects against propionate, which may be due to its ability to form ionic bonds with the carboxylic acid groups on the propionate molecule.
