3-Galloylquinic acid is a cinnamic acid derivative that has been shown to have antiinflammatory properties. It inhibits the production of prostaglandin E2 and leukotriene B4 in cell culture, which are important mediators of inflammation. 3-Galloylquinic acid also inhibits the activity of cyclooxygenase and lipoxygenase, which are enzymes involved in the synthesis of prostaglandins and leukotrienes. This compound has been shown to interact with other bioactive phenolic compounds found in tea leaves, such as caffeine. The mechanism by which 3-galloylquinic acid exerts its biological effects may be due to its hydrophilic interaction chromatography (HIC) properties or its ability to bind to fatty acids.
