Fumonisin B1 is a mycotoxin that is found in corn and other cereal grains. It has been shown to cause liver lesions in animals, as well as immune suppression, decreased insulin sensitivity and increased pro-inflammatory cytokines in the blood. A monoclonal antibody against fumonisin B1 can be used to detect the toxin in cereals and may be useful for controlling this mycotoxin. Hydrolyzed fumonisin B1 inhibits bacterial growth by binding to DNA-dependent RNA polymerase, thereby preventing transcription and replication. The high frequency of human activity has been shown using a patch-clamp technique on human erythrocytes. This active form is metabolized through a number of metabolic transformations, including hydrolysis by esterases or glucuronidases, oxidation by cytochrome P450 enzymes, reduction by glutathione reductase, or conjugation with glucuronic acid.
