Cyanidin-3-(6′′-malonylglucosid) is a glycoside of anthocyanidin with a glucose molecule at C-3. It is the predominant anthocyanin in red grape skin, blackcurrant and blueberry. The 3-OH group of the glucoside moiety can be transformed into a cation by the action of an enzyme called cyanidin synthase. This reaction generates an ionic bond between the hydroxyl group and the carboxyl group of malonylglucoside. The glucoside moiety may also be hydrolyzed by enzymes to form cyanidin aglycone. Cyanidin-3-(6′′-malonylglucosid) has been shown to have antioxidant properties that may help prevent cardiovascular diseases and cancer.
