Description:
Isochroman-4-amine is a potent inhibitor of porcine pancreatic lipase. It is also a hydrolyzing, reductive amination, and kinetic inhibitor. Isochroman-4-amine binds to the active site of the enzyme and blocks fatty acid ester hydrolysis by binding to the catalytic triad. The compound can be used in food production as it has no effect on flavor or color.
