Fumonisin B2 is a toxic, reactive compound that is found in the fungus Fusarium moniliforme. It can cause cell lysis and has been linked to a number of infectious diseases, including cancer. The production of fumonisin B2 is dependent on the type of fungus and environmental conditions. Fumonisin B2 is chemically stable at pH levels below 3.5 and is soluble in water, methanol, and chloroform. In order to detect fumonisin B2, it must be derivatized with an electron-capture agent such as trifluoroacetic acid or dansyl chloride to form a reactive intermediate that can be detected by ultraviolet spectroscopy or liquid chromatography-mass spectrometry (LC-MS/MS).
