1,3-Glyceryl dilinoleate is a food ingredient that is composed of glyceryl dilinoleate and 1,3-glyceryl dipalmitate. It is used in the production of functional fats for health purposes. The supercritical fluid extraction method was used to isolate this oil from cottonseed oil. The biological sample was a triglyceride lipase section that contained fatty acids. This process resulted in an anti-inflammatory potency profile with a high health functional food potential. 1,3-Glyceryl dilinoleate has been shown to have potent anti-inflammatory properties and may be able to prevent or treat inflammatory diseases such as rheumatoid arthritis
