Menthone has been found to inhibit the enzyme DPP-IV, which is involved in the production of proinflammatory cytokines, such as IL-8. Menthone can be synthesized by reacting menthol with acetyl chloride. The structure of menthone can be confirmed using nuclear magnetic resonance spectroscopy (NMR). Isomenthone is another name for menthone that refers to one of its stereoisomers, or two molecules that are mirror images of each other.
