Ethyl dodecanoate

Description:
Ethyl dodecanoate, with the CAS number 106-33-2, is an ester formed from the reaction of ethanol and dodecanoic acid (also known as lauric acid). It is a colorless to pale yellow liquid with a characteristic fruity odor, making it useful in flavoring and fragrance applications. Ethyl dodecanoate is relatively non-toxic and has low volatility, which contributes to its stability in various formulations. It is soluble in organic solvents such as ethanol and ether but has limited solubility in water due to its long hydrocarbon chain. The compound has a moderate boiling point and a low freezing point, typical of esters with long carbon chains. Ethyl dodecanoate is often used in the production of surfactants, as well as in the cosmetic and food industries for its emulsifying properties. Additionally, it can serve as a model compound in studies of lipid behavior and metabolism due to its structural similarity to fatty acids.
