The enzyme catalyzes the conversion of 3-dehydroquinic acid to quinic acid, which is an intermediate in the biosynthesis of benzoic acid from glucose. This inhibition occurs because 3,5-dinitrobenzamide forms a glycosidic bond with Cys34 in these enzymes, which prevents their function.
