This compound has been synthesised and optimised for use as an antioxidant in food and cosmetic products. 2,4,6-Trimethoxycinnamic acid has a high product yield under isothermal conditions using β-cyclodextrin as a solvent. It also shows good stability in the presence of light. 2,4,6-Trimethoxycinnamic acid has been shown to be efficient in preventing oxidation reactions by acting as a scavenger of singlet oxygen and peroxyl radicals.
