L-Cysteine hydrochloride hydrate inhibits bacterial growth by reacting with iron and forming an insoluble complex that cannot be used for metabolic processes. Cysteine also reacts with dehydroascorbic acid to form a fluorescent compound, which can be detected using fluorescence probe and fluorometric methods. This reaction is pH dependent, with a lower pH favoring the formation of the fluorescent product.
