L-Ascorbic acid is a white crystalline solid that can be obtained from the tissues of many fruits and vegetables. L-Ascorbic acid is soluble in water, but insoluble in alcohol. It can be found in two forms: an oxidized form (dehydroascorbic acid) and a reduced form (L-ascorbic acid). The conversion between the two forms is catalyzed by ascorbate oxidase. L-Ascorbic acid has antioxidant properties, which scavenge free radicals, and prevent the oxidation of LDL cholesterol to its more atherogenic form.
