Bz-Gly-Ala-Pro is a synthetic tripeptide. It has been shown to have a carboxypeptidase activity, which hydrolyzes the C terminal of peptides and proteins. Bz-Gly-Ala-Pro was found to be active at a pH range of 2.0 to 10.0, with optimum activity at pH 4.5 to 6.0. The enzyme was found to be stable in captopril perfusates and showed no inhibition from trypsin or pepsin digestion. This peptide binds specifically to the carboxy terminal amino acid of dietary proteins, such as casein, soy protein, and egg albumen, and may play an important role in intestinal digestion and absorption by acting on these sites as well as on other peptidases that are present in the intestinal tract.
