It is used as a crosslinking agent in the manufacture of polymers and as a process optimization agent for starch processing. The surface methodology for octenylsuccinic anhydride was developed to produce agglomerated particles with controlled particle size distribution. This method was optimized by using sodium carbonate as the surface modifier at low pH. Octenylsuccinic anhydride is lipid soluble and can be used to modify lipids in biological systems.
