:ι-Carrageenan
Description:
ι-Carrageenan is a natural polysaccharide extracted from red seaweeds, particularly from the genus Chondrus, commonly known as Irish moss. It is primarily composed of repeating units of galactose and 3,6-anhydrogalactose, which contribute to its unique gelling, thickening, and stabilizing properties. ι-Carrageenan is widely used in the food industry as a gelling agent, particularly in dairy products, desserts, and meat products, due to its ability to form gels in the presence of potassium ions. It is also utilized in pharmaceuticals and cosmetics for its emulsifying and stabilizing characteristics. The substance is generally recognized as safe (GRAS) by regulatory agencies when used in appropriate amounts. ι-Carrageenan is soluble in hot water and forms a gel upon cooling, which can be influenced by factors such as concentration, temperature, and the presence of other ingredients. Its unique properties make it a valuable ingredient in various applications, although there has been some debate regarding its potential health effects when consumed in large quantities.

CAS:
Iota-Carageenan is a gelling sulphated galactan extracted from red seaweed (typically Euchuma cottonii and Euchuma spinosum). The structure of all carrageenans consists of a strictly alternating masked repeating unit of (1,3) linked α-D-galactose and (1,4) linked β-D-galactose. The α-linked galactose occurs as a 3,6-anhydro-2-sulphate unit and the β-linked sugar occurs as the 4-sulphate.
The image was kindly provided by Prof Mike Guiry from Cork who runs ‘The Seaweed Site’.
Color and Shape:Powder
