:Lambda-carrageenan
Description:
Lambda-carrageenan is a sulfated polysaccharide derived from red seaweeds, particularly from the genus Chondrus, commonly known as Irish moss. It is characterized by its ability to form gels in the presence of potassium ions, making it a valuable thickening and gelling agent in various food products, cosmetics, and pharmaceuticals. Lambda-carrageenan is soluble in hot water and exhibits a high viscosity when dissolved, which contributes to its functionality as a stabilizer and emulsifier. Its molecular structure consists of repeating units of galactose and 3,6-anhydrogalactose, with sulfate groups that enhance its solubility and gelling properties. Lambda-carrageenan is generally recognized as safe (GRAS) for consumption, but its use is regulated in food products, and it is often labeled as E407. Additionally, it has applications in the biomedical field, particularly in drug delivery systems and tissue engineering, due to its biocompatibility and ability to form hydrogels. Overall, lambda-carrageenan is a versatile and widely used biopolymer with significant industrial and scientific relevance.

λ-Carrageenan
CAS:
Lambda-Carrageenan is a non-gelling sulphated galactan extracted from red seaweed (typically Gigartina stellata and Chondrus crispus). The structure of all carrageenans consists of a strictly alternating masked repeating unit of 1,3-linked α-D-galactose and 1,4-linked β-D-galactose. λ-Carrageenan has the α-linked unit 2-6-disulphated and the β-linked unit is 2-sulphated.
The image was kindly provided by Prof Mike Guiry from Cork who runs ‘The Seaweed Site’.
Color and Shape:PowderMolecular weight:1140.92λ-Carrageenan
