It is a reaction system that can be introduced to any strain of bacteria, yeast or fungus in order to inhibit their enzyme activities. Sodium D-pantoate has been shown to have an inhibitory effect on the growth of many microorganisms, including those related to food spoilage and human pathogens. Inhibition of bacterial growth by sodium D-pantoate appears to be due mainly to the formation of covalent bonds with essential amino acid residues in the enzyme active site, thereby preventing the enzymes from functioning.
