12-Hydroxyoctadecanoic acid is a fatty acid that is derived from 12-hydroxyoctadecenoic acid, which is an unsaturated fatty acid. It has been shown to have a high degree of hydrogen bonding and is the most hydrophobic of all fatty acids. The chemical structure consists of one hydroxyl group, one carboxylic acid group, and one acylation reaction. 12-Hydroxyoctadecanoic acid also contains phosphorus pentoxide, which has two hydroxyl groups and four oxygen atoms.
