It is often combined with sodium benzoate, sodium citrate, and sodium erythorbate to prevent spoilage by mold or yeast. Sodium diacetate also has antimicrobial properties that are comparable to those of sodium carbonate and dimethyl fumarate. It has been shown to inhibit the growth of some bacteria including monocytogenes, typhimurium, and propionibacterium acnes. This compound also reduces the pH of food products by neutralizing acids.
