It is synthesized from steviol glycosides, which are isolated from the leaves of Stevia rebaudiana. Steviol glycosides are hydrolyzed in the presence of acid to produce 1-(4-ethoxyphenyl)urea and glucose. The taste of 1-(4-ethoxyphenyl)urea can be altered by substituting various acids for hydrochloric acid in the synthesis. 1-(4-Ethoxyphenyl)urea has been shown to bind to specific receptors on the surface of taste cells. The binding produces a response that is detected by nerve endings and transmitted to the brain, where it is interpreted as sweetness. This binding can be inhibited by p-hydroxybenzoic acid, a chemical known as a fluorescence probe.
