1-(4-Ethoxyphenyl)urea is a sweet-tasting compound that is used as an artificial sweetener. It is synthesized from steviol glycosides, which are isolated from the leaves of Stevia rebaudiana. Steviol glycosides are hydrolyzed in the presence of acid to produce 1-(4-ethoxyphenyl)urea and glucose. The taste of 1-(4-ethoxyphenyl)urea can be altered by substituting various acids for hydrochloric acid in the synthesis. 1-(4-Ethoxyphenyl)urea has been shown to bind to specific receptors on the surface of taste cells. The binding produces a response that is detected by nerve endings and transmitted to the brain, where it is interpreted as sweetness. This binding can be inhibited by p-hydroxybenzoic acid, a chemical known as a fluorescence probe.
