Bovine β-Lactoglobulin A is a protein that has been modified by the addition of a phosphate group at residue 41. It is a basic protein, containing four acidic and two basic functional groups. The tryptic peptides from this protein have been found to be composed of three major fragments. Bovine β-Lactoglobulin A contains high concentrations of choline and can act as an acceptor for chloride ions in analytical chemistry. This protein has been shown to form complexes with dextran sulfate, which are useful for separating it from other proteins during fractionation procedures.
