3-Acetyl-DON is a mycotoxin that belongs to the group of sterigmatocystin. It is an inhibitor of protein synthesis and is toxic to cells by causing oxidative stress. 3-Acetyl-DON has been shown to be produced by a wide variety of fungi, including Aspergillus niger, A. flavus, Penicillium chrysogenum, and P. brevicompactum. 3-Acetyl-DON has been found in urine samples from humans that were exposed to zearalenone in their diet and in animal studies with dietary concentrations ranging from 0.1 μg/kg to 1000 μg/kg. The toxin was also found in food composition such as wheat flour and corn meal at levels up to 1 mg/kg.
