DL-Alanyl-DL-valine is a dipeptide that is found in dietary protein. It is an amino acid that contains two amino acids, alanine and valine, in its structure. The DL-form of this compound has been shown to interact with other solutes and formamide when subjected to mass spectrometry. This dipeptide also exhibits stereoisomers in the form of L-alanine and D-valine. The DL-form of this compound has been found to be more stable than the L-form due to the presence of a hydroxyl group on the carbon atom adjacent to the carboxyl group. The DL-form of this compound can be thermodynamically stabilized by adding formamide through a stepwise process.
