Fumonisin B3 is a toxic substance that belongs to the group of fumonisins. It can be found in corn and certain other cereal crops that have been infected by the fungus Fusarium moniliforme. Fumonisin B3 has been shown to be carcinogenic and teratogenic in rats. The toxicological effects of this substance are largely due to its matrix effect, which results in an inhibition of detoxification enzymes and physiological effects such as liver lesions. Fumonisin B3 is eliminated from the body through urinary excretion following metabolism by various detoxification enzymes, including glutathione S-transferase and cytochrome P450 enzymes, or by binding to plasma proteins. This compound also inhibits DNA synthesis and RNA synthesis, resulting in a decrease of protein synthesis in cells.
