Isoamyl Hexanoate is a hexanoate molecule that is produced by the reaction of 2-methylbutyl hexanoate with nitrogen atoms. It can be used as a food additive, which is often found in the form of its esters such as ethyl decanoate and diethyl succinate. Isoamyl Hexanoate has been shown to inhibit the growth of probiotic bacteria and other pathogenic bacteria. This inhibition may be due to its reaction with phosphotungstic acid or caproic acid, both of which are organic acids. The inorganic acid diethyl succinate may also have an effect on bacterial growth.
