It is not toxic to the galleria mellonella larvae in toxicity studies and does not have any effect on the heart in congestive heart failure studies. However, it may be toxic to the liver due to its ability to react with amines. Sorbic acid ethyl ester reacts with hydroxyl groups present in fatty acids to form hydrochloric acid and caproic acid. This reaction mechanism has been shown using solid phase microextraction (SPME) with hydrochloric acid gas on a fatty acid sample.
