Epitheaflagallin 3-o-gallate is a natural product that belongs to the class of flavonoids. It is a potent inhibitor of matrix metalloproteinases, which are enzymes in the extracellular matrix that play an important role in the formation rate of collagen and other proteins. Epitheaflagallin 3-o-gallate has been shown to be effective at inhibiting the shikimate pathway, which produces aromatic amino acids used by bacteria to synthesize essential aromatic compounds. This compound also inhibits tyrosinase, a key enzyme involved in melanin biosynthesis, and pancreatic lipase, an enzyme involved in lipid metabolism. The antioxidative properties of this compound have been shown using a DPPH assay.
