Ammonium tartrate dibasic is a crystalline solid that belongs to the class of inorganic compounds. It is used as a model system for studying the behavior of potassium and water vapor. Ammonium tartrate dibasic has been shown to have sorbitol dehydrogenase activity, which is catalyzed by calcium pantothenate and calcium. Sorbitol dehydrogenase converts sorbitol into fructose, which is an important intermediate in the glycolytic pathway. Electrochemical impedance spectroscopy has revealed that ammonium tartrate dibasic undergoes phase changes from tetrahydrate to hexahydrate when heated or irradiated, with radiation being more effective than heat alone. Ammonium tartrate dibasic also exhibits biological activity, inhibiting the growth of bacteria such as staphylococcus aureus and mycobacterium tuberculosis.
