1-Octen-3-one is a fatty acid that has been shown to absorb light and produce unsaturated ketones. The unsaturated ketones are stable in the presence of oxygen, but will react with light when exposed to oxygen. The reaction products from the photochemical reactions can be analyzed by gas chromatography. 1-Octen-3-one is used as a model system for studying fatty acids and their reactions with light.
