Methyl 2-hydroxyheptanoate is a fatty acid that is found in soybean lipoxygenase. It has been shown to inhibit prostaglandin synthesis by the enzymatic hydrolysis of methyl 2-hydroxyheptanoate. The hydrolysis products of this reaction are anions, sulfoxide, and carboxylates. Methyl 2-hydroxyheptanoate is also a substrate for the enzyme, soybean lipoxygenase. This enzyme catalyzes the conversion of methyl 2-hydroxyheptanoate to prostaglandin E2 (PGE2). PGE2 is a potent inhibitor of platelet aggregation and vasoconstriction.
