cis-Anethole is a nonpolar solvent with a boiling point of 266°C. It has been used in the manufacture of perfumes, cosmetics, and flavoring agents. cis-Anethole is also used in the preparation of samples for analysis by solid phase microextraction (SPME). The extraction process involves the use of a water vapor to draw out the sample from its source, followed by an acidification step to convert the analyte into its corresponding sodium salt. cis-Anethole has been shown to inhibit bacterial growth through steric interactions with fatty acids at their active site on enzymes such as esterase and lipase. This inhibition prevents hydrolysis or oxidation reactions from taking place and leads to cell death.
