Aflatoxin M1 is a mycotoxin that is produced by Aspergillus flavus and Aspergillus parasiticus. It has been shown to cause genotoxic activity in humans and carcinogenic potential. Aflatoxin M1 has also been shown to inhibit the growth of probiotic bacteria. The structural analysis of this substance has been performed using organic chemistry methods. Aflatoxin M1 causes DNA damage and inhibits protein synthesis, which leads to cell death. The optical sensor is used for detection of aflatoxins in milk samples and is based on the fluorescence properties of this compound. Electrochemical impedance spectroscopy (EIS) can be used for the analysis of matrices with aflatoxins, such as corn oil or peanut butter, due to its non-destructive nature.
