It has been shown to inhibit the production of matrix metalloproteinases (MMPs) in vitro, which are enzymes that break down proteins in the extracellular matrix and can cause tissue damage. Anethole also inhibits the activity of MMP-9, an enzyme found in macrophages that is important for the inflammatory response. The reaction solution with anethole was used as an analytical method for wastewater treatment, where it was found to be more effective than eugenol. Anethole binds to toll-like receptor 4 (TLR4), which is a protein on cells that recognizes bacterial products and activates innate immune responses. This binding leads to activation of the transcription factor NF-κB, which triggers the synthesis of proinflammatory cytokines such as IL-1β and TNFα.
