Glycyrrhiza species are plants that belong to the genus Glycyrrhiza. These plants contain glycyrrhizin, a saponin that has been shown to have physiological effects such as anti-inflammatory and antioxidative properties. The glycyrrhetic acid in these plants is a triterpenoid saponin with a hydroxyl group and an acetate extract. The chemical structure of this compound is similar to β-amyrin, which is also found in these plants. Hydroxylation of this compound leads to deacetylation of the hydroxyl group, causing nitrite levels to increase.
